At the beginning of a movie or TV series, the protagonist is living under an assumed identity and working in a kitchen. One day, a cook gets into a violent conflict with a coworker and stabs him. The protagonist steps in to stop the attacker and tells him that he has cut a major artery, and that if he doesn’t surrender immediately, the victim will bleed to death. The cook is then restrained, but as a result, the protagonist’s true identity is exposed.
In “Under Siege” (1992) there is a somewhat similar scene, although it is not a perfect match if I recall the scene correctly. And the scene is set in the kitchen of a warship. Maybe?:

I’m wondering if this could be an episode from The Fugitive, either the original or brief TV version after the movie. Why was the protagonist exposed by saying a major artery was struck? Because he was a doctor? Richard Kemble was a doctor.
