So there was this ad on Instagram in 2018 about a movie that was filmed.
It was about a man who randomly blanks out throughout the day and can’t remember what happens in those blank moments. The scene played in the trailer shows him finishing his meal and heading towards the sink with the dishes where he freezes completely. It’s stated that he films himself to figure out what he does during the blanks in his memory.
Seemed like a horror / documentary.
There is a movie from 2004 with Johnny Depp called secret window. Not the right date, but kinda sounds like it.

It took a bit of searching but I think I’ve tracked it down? It looks like it was a web series, made in 2016, called “Blackout” about a man experiencing blackouts who films himself, and a documentary crew follow his story.
